  When I first started the 21 Day Fix, I was not a vegetarian (looking at you, cheesy shrimp pasta!) I have officially found my newest favorite snack. Although, these are more of a supplemental meal of sorts. They are packed with dense nutrition- a full serving of fruit, protein, as well as a healthy fat. My biggest downfall when it comes to nutritional health will always be my sweet tooth. For my last meal, I'd probably choose a 1/2 baked, warm chocolate chip cookie... or the center of a Cinnabon.. or a warm brownie... you get the gist. ;) I've found ways to curb my sweet tooth with healthy alternatives, like these peanut butter brownies, balsamic baked berries, PB&J thumb print cookies, chocolate blueberry cupcakes with a whipped peanut butter frosting, and this baked chocolate peanut butter banana, but these seriously take the cake. When it comes to roasting vegetables, I'm a huge fan. I've always been a huge fan of veggies in any sort (when I was about 5, my favorite food was salad; I was a weird child) ;) . When you add teriyaki in the mix, you have me sold. When you roast or bake meals with a sugar element in it (like balsamic or, in this case, teriyaki, it crystalizes and provides an added crunch- yum!) This is my favorite go-to side dish. I eat these as a snack or add them to some rice & protein and make a meal! Occasionally, without intention, I'll whip up something random for dinner and it turns out amazing. This just causes one little problem for me (fellow bloggers, I'm sure you'll feel my pain), but since the recipe wasn't planned, I don't take pictures of the process- oops! Last night Dj & I watched the documentary, Forks Over Knives. It's a look into our dietary health and how our diets as humans and nations has changed over time. It was SO interesting and I highly recommend checking it out if you're interested in health and food. The diet centers around more plant-based, whole foods, which I know is very important. They made the argument that if you do have meat in your diet, you should look at it more as a condiment rather than the focal point of your plate.
