Slow Cooker Chocolate Lava Cake – Super Bowl Goodies Series

Slow Cooker Chocolate Lava Cake

I'm at a loss for words on how to preface this recipe. It's not even close to healthy (unlike these chocolate peanut butter brownies). BUT, it's good for the soul; and I'm all about those soulful indulgent once-in-a-time recipes. I have full on heart-eye emojis over here just thinking back on this slow cooker chocolate lava cake. It was seriously amazing; and knew, even though I try to center this blog around living healthy, that I had to share it with you all. Plus, a little lava cake is perfect for days that you save your treats for; aka: this years Super Bowl. I made this cake for a co-workers birthday. I'm huge on bringing crock pot recipes because I can prep the ingredients beforehand, but allow it to cook during the…

Avocado Chickpea Salad Sandwich

Vegan Avocado Chickpea Salad Sandwich || If you're looking for a hearty meal (vegan or not) look no further! This amazing sandwich can be made in 5 minutes, is packed with nutrients, and GOOD for you food!

I'm pretty sure if they had support groups for people who loved Facebook food videos, I'd be the first one to sign up. I really love this new trend of short recipe clips flooding my timeline and am constantly jotting down ones that I 'neeeed to try asap'! Now if only someone would create a Pinterest-esq site for these quick food videos so that I could store them in a more effective way directly on Facebook... The other week, Buzzfeed Tasty posted a video featuring an avocado chick pea sandwich and I was super inspired. I absolutely love sandwiches that feature "salads". My infamous skinny fruit + nutty chicken salad recipe is a crowd favorite, but ever since going vegetarian almost a year ago, I've been hunting down subs for my past favorites. Once…

Savory Watermelon Pizza

Savory Watermelon Pizza

If you're one of those people that is very technical on food names, I feel ya. However, hear me out here. While this recipe might now have the typical crust variable (ehem.. dough..), it does have sauce! and toppings! and CHEESE! Plus, it's cut up just like a pizza is and you can hold it, so I'm calling it a pizza and running with it. ;)   I actually made two variations of these pizzas. One savory and one sweet. I did that once before with butternut squash in college and made a competition post of some sorts (check back on my beginner blogger skills if you want to check that recipe out), and had the same plan to do that here. However. Something happened... I could not decide which I loved more.…

Guacamole Goat Cheese Toast

"Chia-Avacado-Goat-Cheese-Toast"

When it comes to breakfast, lunch, dinner, (okay, literally any time of the day), avocado is my jam. I have a very similar love affair with goat cheese, so when I combine the two, something magical happens. If you remember my go-to breakfast for avocado English muffins, this post won't come as a surprise to you that this is still my ultimate go-to breakfast combo, but adding some variations to recipes never hurt anyone. In fact, I've found ways to improve on already stellar recipes (teriyaki chicken stir fry BAKE, anyone?) I was really craving some avocado toast the other morning, but I just had one problem: I didn't have any ripe avocados. However, I'm not one to give up that easily, and when I realized that I had some single servings of guacamole…

Healthy Teriyaki Vegetable “Fried” Rice

"Healthy-Homemade-Vegetarian-Fried-Rice"

One of my favorite ways to cook is to take classic comfort foods and try to make them healthy. Sometimes they don't always work out, but then there's times like this (or that time) where the recipe comes out and you can't believe that it's healthy and you probably won't ever go back to the take out version. Do you remember my latest post on my recipe for teriyaki roasted veggies? Well, I used those to create this healthy "fried" rice! I love it when recipes are versatile and you can change up how you want to use them. This recipe is a good mix of both fresh and roasted vegetables, fluffy eggs, brown rice, salty feta cheese, and tons of different spices! I made my vegetarian (because if you didn't know, I am…

Easy Winter Vegan Soup

Vegan Winter Soup

Occasionally, without intention, I'll whip up something random for dinner and it turns out amazing. This just causes one little problem for me (fellow bloggers, I'm sure you'll feel my pain), but since the recipe wasn't planned, I don't take pictures of the process- oops! With today's post, the outcome picture will just have to do. ;) I've been trying to follow a vegetarian diet for about 2 months now. For those reasons, I intentionally made this quick dish vegetarian, accidentally vegan, and it's also oil free! If you're like me and love quick dinners you can whip up, try out this soup. It reminds me a lot of my Zesty Fiesta Soup, just with a much simpler ingredient list. Here's what you need: 2 cans of corn [not drained] 1 can of black…

Pulled Zesty Pineapple Chicken [in the crock pot!]

Pulled Zesty Pineapple Chicken

This week, I dusted off my crock pot. It's a "chilly" 70 degrees in Florida, and finally feeling like fall. Autumn to me means a few things: Soups Pumpkin Oatmeal & most importantly: crock pot recipes Sunday morning, I woke up early with an unusual amount of energy. I went on a 20 minute run, cleaned my apartment, did all the [masses] of dishes, and even prepped lunches & dinners for the work week. Crock pots are magical for this very reason. I love when I can throw a meal together and just forget about it. I've created a similar shredded taco chicken in the past, but this has a more citrus-y kick to it! The chicken is amazing paired with some brown or wild rice and veggies. [I used broccoli, corn, & carrots!]…

Skinny 7 Layer Taco Dip – Tailgating Thursday

Skinny 7 Layer Taco Dip

I'm the queen of dips. The favorite buffalo chicken dip... the classic french onion dip with a healthy twist... or the ever so simple creamy roasted garlic homemade hummus... and now this skinny 7 layer taco dip are all a staple in my presence, especially when football is involved. I'm one of those people who can't show up to a gathering empty handed. If someone, no matter who they are, is having a get together, count me in to bring my favorite bottle of wine or better yet, a dish to share that I know mostly everyone will be a fan of. 7 layer taco dip is something I'm 99% sure everyone has heard of and most enjoy. As you know, I love taking classic comfort recipes and giving them a light twist, which is exactly what…
