Well, it took me long enough, but I’m finally on the overnight oats boat!

I love hot oatmeal so much that I didn’t think it could get better… until this stuff came along! It’s the perfect thing to make ahead and grab on the go. I would recommend making them only 3 days in advance, however, so if you wanted to meal prep them for your work week, make 3 on Sunday and 2 on Wednesday.

Oh, and making them in mason jars? Doesn’t get much cuter or easier to toss in your bag on the way out the door and enjoy at work, school, or even in the car!

Chocolate Chip Banana Bread Overnight Oats



Here’s what you need: [serving size: 1 mason jar]

  • 2/3 cup of oats
  • 2/3 cup of unsweetened almond milk [+ a few tablespoons for later]
  • 1 tablespoon of Truvia [or 1 packet]
  • 1 tablespoon ground cinnamon
  • 1 tablespoon pure vanilla extract
  • 1/2 large banana [sliced thin; like this!]
  • 2 tablespoons of chocolate chips
  • 1 pint sized mason jar [or a container of your choice]


The steps to overnight oats could not be easier. The trick is doing equal parts liquid to oats. Some recipes call for yogurt, but I prefer using a milk base. It’s more sweet, light, and has less of a tang.

Start by adding the oats to your jar then the almond milk [any type of milk will do if you prefer coconut or regular].

Start layering your ingredients & once you have them all in the jar, shake it up so that the milk is covering all the oats & there is more liquid to solid showing in the jar. [This is where the extra tablespoons of milk come in!]

In the morning, just grab your jar and you’re ready! Stir it all up & enjoy!

You can enjoy this breakfast cold or microwave it for a few seconds to melt the chocolate- whatever you prefer!
