I am queen of holiday procrastination, but I really loath showing up anywhere without a dish in hand, so while all of these recipes are quick, they are also huge crowd favorites! Are you getting into anything special for Thanksgiving this year? My mom + sister are coming down to visit and we're heading over to a good friend's house for the day. Thanksgiving to me is all about friends, family, football, and wayyyy too many mashed potatoes consumed. ;) What reminds you most of t-day? I hope whatever you find yourself getting…

Homemade Spicy Guacamole

Homemade Spicy Guacamole

Confession hour: I have a huge- giant - massive - obsession with all things avocado. And by that, 90% revolves around guacamole [the other 10% I leave to this avocado goat cheese toast.] Since getting involved with BeachBody and the 21 Day Fix, it was brought to my attention that, while avocados are a healthy fat, they (along with most things in life) should be enjoyed in moderation. Recipe: skinny breakfast pizza Throughout the years, I've made a fair share of homemade guac. Honestly, I prefer the homemade kind compared to the restaurant version, but that's probably because I jam pack it with other ingredients to lighten it up a bit. See, when you add different veggies into the guacamole, it packs it with lighter ingredients, making it lower in calories, as well as…

Sweet + Fruity Watermelon Pizza

Sweet and fruity Watermelon Pizza

As I told you before, I'm huge on making plays on typical foods in unusual ways. I actually made two variations of these pizzas. One savory and one sweet. I did that once before with butternut squash in college and made a competition post of some sorts (check back on my beginner blogger skills if you want to check that recipe out), and had the same plan to do that here. However. Something happened… I could not decide which I loved more. SO, in spirits of not playing favorites, I’m giving each watermelon pizza their own posts. Because they REALLY deserve it. [Check out the Savory Watermelon Pizza post here!] This kind of recipe is my favorite when I need something to bring along to group events. Summer is hot and in full swing,…

Caprese Balsamic Soft Boiled Eggs

"Caprese-Salad-Soft-Boiled-Eggs"

I think one big misconception about eating a healthy diet is that there is so much prep and time that goes into it. In reality, I'm always finding ways to whip up meals and snacks that take less than 10 minutes.  The key is to keep certain staples around your house that are prepped beforehand. I like to meal prep one day during the week (usually Sunday nights or Monday nights) basic foods that I know can work in various recipes. These generally include: Brown rice Hard boiled eggs Soft boiled eggs Baked veggies Brown rice pasta or whole wheat pasta Spaghetti squash Tofu (or chicken, shrimp, ground turkey, or any other lean protein) Then, when the day comes, I can mix and match what I want to eat. The meals generally include: Stir…

Skinny Pickled Deviled Eggs

"Pickled-Deviled-Eggs"

It's funny to look back on childhood memories and compare your experiences to ones your friends had. Some we share, like going to private school then switching to public school and the all horrendous outfit choices you made your first year now that you had the choice of wardrobe. (I literally wore a blue snake-skin cheetah shirt that tied up in silky back string my first day of 5th grade and still remember it to this day... ugh.) While some experiences were vastly different. You should have seen my boyfriends face when he asked me what I was making and I told him pickled eggs. "Uh... pickled eggs????" I was, in return, shocked that he'd never had one before- something that my grandparents would keep in bulk in their fridge and I would choose…

What I Ate on Wednesday; Vol. 3

"Easy weekday meal ideas"

One question I’m frequently asked is what I eat on a typical day-to-day basis. Sure, recipes are great, but many people want to know the more simple meals I munch on throughout the day. From the post: Homemade Acai Berry Bowls As an easier guide besides “check out some breakfast and lunch ideas on my blog!”, composing a post that gives an exact depiction of what I eat from the time I wake up to the time I go to sleep seemed a lot easier. I'm a big believer in eating foods that are healthy for you. I don't count calories, I rather keep track of food groups + the nutrients that I put into my body. I'm currently on the 21 Day Fix, which provides healthy workouts (only 30 minutes per day- yesss)…

Teriyaki Roasted Veggies

"Teriyaki-Roasted-Vegetables"

When it comes to roasting vegetables, I'm a huge fan. I've always been a huge fan of veggies in any sort (when I was about 5, my favorite food was salad; I was a weird child) ;) . When you add teriyaki in the mix, you have me sold. When you roast or bake meals with a sugar element in it (like balsamic or, in this case, teriyaki, it crystalizes and provides an added crunch- yum!) This is my favorite go-to side dish. I eat these as a snack or add them to some rice & protein and make a meal! If you're interested in how you can make these more substantial, check out this recipe for my Teriyaki Chicken Stir Fry Bake. Here's What You Need: 3 cups of raw broccoli 2 cups raw…

Skinny 7 Layer Taco Dip – Tailgating Thursday

Skinny 7 Layer Taco Dip

I'm the queen of dips. The favorite buffalo chicken dip... the classic french onion dip with a healthy twist... or the ever so simple creamy roasted garlic homemade hummus... and now this skinny 7 layer taco dip are all a staple in my presence, especially when football is involved. I'm one of those people who can't show up to a gathering empty handed. If someone, no matter who they are, is having a get together, count me in to bring my favorite bottle of wine or better yet, a dish to share that I know mostly everyone will be a fan of. 7 layer taco dip is something I'm 99% sure everyone has heard of and most enjoy. As you know, I love taking classic comfort recipes and giving them a light twist, which is exactly what…
