Roasted Balsamic Glazed Cranberry Pecan Brussels Sprouts

Roasted Balsamic Glazed Brussels Sprouts

Oh, Brussels sprouts, the most misunderstood veggie out there. [Side note- did anyone else know it's spelled Brussels sprouts & not brussel sprouts? You really do learn something new every day ;) ] I was on a mission: make my boyfriend like Brussels sprouts. It was a pretty large goal to tackle, but I was up for it. I'd already won this battle once, so I was full on ready to win again. ;) I've always loved vegetables, in any variation, so I've jumped up on the sprout's bandwagon long ago. I was sold; Dj, not so much. Everything is better with balsamic glaze on it, so I started there. After roaming through my pantry, these ingredients popped out- and would you believe it- Dj ate the whole dish! You Need: 1 bag of…

Chocolate Banana Blueberry Cupcakes with Lite Whipped Peanut Butter Icing || Skinny & Nutrient Packed !

Chocolate Banana Blueberry Cupcakes with Lite Whipped Peanut Butter Icing

I’ve talked many times about how big of a sweet tooth I have. The love I have for chocolate is crazy! If I could, I would eat extra chocolate chip, gooey cookies for breakfast, lunch, and dinner. (I just caught myself daydreaming there…) HOWEVER, when it comes to sweets, I’m all about modifications, not about limitations. If I tell myself I can’t have something, it’s all I will crave. So, to bypass that, I’ll find recipes that sub in some healthy ingredients for a less-guilt treat! And thus- these magical, yummy cupcakes were brought into my life. When I saw this post on Taralynn’s blog a few months ago, I pinned it to my “must try” recipe list. However, as most pins go, I forgot about it.. Until now :). With a few simple modifications…

Low-Fat Yogurt Holiday Bark

As many of you know, dessert is my favorite food group. If I could, I would make chocolate 90% of my daily diet. I am constantly trying out ways to help curb my sweets cravings in different, healthy ways. Now that the weather is turning into boots and scarf season, my holiday spirit has cranked way up. I have caught the baking bug, and my kitchen is already beginning to overflow with holiday treats! It probably comes at no surprise that holiday bark is one of my favorite snacks this time of year. What’s not to love about candy layered over chocolate? I’ll be making some closer to December time, but in the meantime, I created a healthy substitute! Let me introduce you to my latest obsession: Low-Fat Yogurt Bark! Similar to the typical…

Open Faced Turkey, Guacamole, Steamed Egg Sandwich!

Guys…. I have one more paper due and then I am officially done with my undergraduate degree. I’m going to pause to take that in for a moment. Time has really flown! It’s also extremely overwhelming because I have no idea where I will be 1-2 months from now, but it’s extremely exciting at the same time. Dj had an interview in California for an aerospace engineering job this past week and is flying to Florida in a few days to take on another! Exciting times for all of us. :) Anyways, I want to apologize again for the lack of activity lately! Since it is finals week, my life consisted of coffee, coffee, and more coffee. ;) Not much to blog about there! Except the fact that Starbucks has those adorable red cups…

Healthy Deviled Eggs! No Mayo!

Healthy Deviled Eggs

I am still in a food coma from yesterday! I love love love Thanksgiving. Not only the amazing food, but family time, as well! I rarely am able to see my little sisters & my dads side of the family because they are in California, while I’m in West Virginia. Sooooo, I really love the holidays when I get to come back and love on them! My sister, Jordyn, loves to cook as much as I do. She’s only 12 years old, but already an amazing baker! She makes the most beautiful cakes I have ever seen! Yesterday, Jordyn and I took to the kitchen to make multiple dishes. One of my all time favorite side dishes is Deviled Eggs. They are so yummy, but with all the mayonnaise included, the healthy part of…

Pumpkin Cinnamon French Toast & Caramelized Bananas!

Happy Thanksgiving! Being in California right now makes it feel more like May rather than almost December. As I sit here in shorts and a tank top, I am feeling thankful for the weather! :) The other morning, one of my younger sisters, Jordyn, and I wanted to make everyone breakfast. We decided to do a healthy spin off one of our favorites, French Toast! Are you tired of pumpkin yet? I’m not! ;) You Need: *Whole Wheat Bread *1 cup Pure Pumpkin *1 cup Unsweetened Almond Milk *2 Tablespoons Ground Cinnamon *2 Tablespoons Agave *2 Tablespoons of Stevia* 1 Egg White* Mix all the ingredients (minus the bread) in a large bowl! Heat a large skillet and dip your bread into the mixture. I chose to use whole wheat bread while Jordyn chose…
