It was SO interesting and I highly recommend checking it out if you're interested in health and food. The diet centers around more plant-based, whole foods, which I know is very important. Smokey turkey kielbasa + fresh veggies + hearty beans & potatoes = the perfect brothy, nutrient packed, and filling fall soup. When the weather cools down, I tend to gravitate more towards the warming comfort foods. Soups, oatmeal, fresh hot muffins, crock pot meals... You get the gist.  :) This soup is the perfect balance of light yet hearty. This week, I dusted off my crock pot. It's a "chilly" 70 degrees in Florida, and finally feeling like fall. Well, it took me long enough, but I'm finally on the overnight oats boat! I love hot oatmeal so much that I didn't think it could get better... until this stuff came along! It's the perfect thing to make ahead and grab on the go. I would recommend making them only 3 days in advance, however, so if you wanted to meal prep them for your work week, make 3 on Sunday and 2 on Wednesday. Oh, and making them in mason jars? Doesn't get much cuter or easier to toss in your bag on the way out the door and enjoy at work, school, or even in the car! I realize not alllll of you have Instagram [although I'm extremely obsessed with it and don't understand how not everyone can not be ;) ], so I thought I'd share with you all some of my simple go-to's I typically reserve for my Insta! I have a bit of an obsession with oatmeal. Umm, do you recall this chocolate peanut butter cup or this chocolate covered strawberry recipe??? (drooool). My staple breakfast is most likely oats. This is a cup of plain old fashioned oats cooked in water.
